Shinobi has opened on Al Wasl Road, introducing a new handroll-focused Japanese dining concept to Dubai. The restaurant centres on made-to-order handrolls prepared with crisp nori, warm rice and quality seafood. Its premium-casual approach places freshness, texture and timing at the heart of the experience.
Beyond handrolls, the menu also includes nigiri, sashimi, tacos, salads, hot dishes and desserts. Drinks range from house-made sodas and kombuchas to teas and coffee, giving the concept a broader all-day appeal. Music, art, fashion and street culture shape the atmosphere, with DJ sessions and a soundtrack spanning old-school hip-hop and contemporary sounds.
Shinobi is the latest concept from Monarch Hospitality Group, the Dubai-based team behind Kraken and Mamati. The restaurant brings the group into Japanese dining with a more relaxed and energetic direction. Its mix of handrolls, street-inspired design and music-led atmosphere adds a distinctive new option to Dubai’s growing sushi scene.
