1206 is a new hidden restaurant opening on 30 October 2026 at Jumeirah Marsa Al Arab. Located on the resort’s fourth floor, the restaurant takes its name from a previously concealed room. The space features an outdoor terrace garden with views of Burj Al Arab and Burj Khalifa.
Led by Head Chef Stephanie Haywood, the menu combines British culinary traditions with French, Mediterranean and Scandinavian influences. The restaurant focuses on seasonal produce, partnerships with local farms and sustainable cooking techniques. Fermentation, curing and slow cooking are central to its approach, with an emphasis on using every part of each ingredient.
Designed by AvroKO, the interiors feature earthy tones, carved marble and handcrafted details inspired by the Levantine coast. The terrace garden supplies fresh herbs and botanicals for both dishes and cocktails. The wine selection highlights smaller producers, grower Champagnes and sustainably produced wines.
